La cosa più semplice da fare è la besciamella, quando si compra al supermercato ci chiediamo quale ricetta elaborata sia nascosta, invece la besciamella fatta in casa è veloce e facile ed è molto più buona di quella a lunga conservazione. Con la besciamella fatta in casa si può scegliere la consistenza e gli aromi ed è sicuramente più sana di quella confezionata!
Ingredienti:
- 500 ml di latte fresco intero
- 50 g di farina
- 50 g di burro
- q.b. di sale, pepe e noce moscata
Procedimento:
In un pentolino di acciaio versare la farina, i burro, il sale, il pepe e la noce moscata grattugiata. Portare sul fornello a fuoco basso e fare sciogliere il burro., quando la farina sarà ben amalgamata al burro ed avrà un colorito marroncino chiaro possiamo aggiungere il latte, poco per volta e contemporaneamente mescolare con una frusta in modo da non formare grumi. Continuare a cuocere a fuoco moderato fino a quando diventa densa e arriva a bollore.
Togliere il pentolino dal fornello e lasciare raffreddare, girandola di tanto in tanto per non fare formare la pellicola in superficie.
Quando faccio la besciamella per le lasagne non uso tutta la farina ma diminuisco i grammi, ne metto 30gr. Diminuendo i grammi della farina la besciamella è meno densa e personalmente preferisco questa consistenza per le lasagne. Invece se devo usare la besciamella per un ripieno uso le dosi corrette, a volte a seconda della ricetta aggiungo qualche grammo.
